Bresaola and Ricotta

This is a great recipe to do if you’re entertaining as it can be prepared well in advance. Aesthetically very pleasing, you are sure to impress even the most discerning dinner guest. Ricotta as a cheese is one of the blandest you can find. Therefore the trick to this dish is seasoning the ricotta well as that is what brings the ricotta to life. By adding home made basil pesto, parmesan, lemon juice and salt the ricotta transforms itself into a tasty antipasto.

200grams of ricotta;3tsp of pesto;10grams parmesan cheese; ½tsp sail; ½tsp white pepper; juice ½ lemon;] [ recipe-directions]=' Mix the ricotta,pesto,parmesan,lemon juice,salt and pepper in a bowel; Scoop 1tbsp of the mixture and place onto the centre of the bresaola; Bunch the meat together into a flower shape; Pinch the meat together hold it into place; Drizzle a small amount of pesto over the top; Garnish with an olive;

Ingredients
  • 200grams of ricotta
  • 3tsp of pesto
  • 10grams parmesan cheese
  • ½tsp salt
  • ½tsp white pepper
  • juice ½ lemon
Instructions
  1. Mix the ricotta,pesto,parmesan,lemon juice,salt and pepper in a bowel.
  2. Scoop 1tbsp of the mixture and place onto the centre of the bresaola.
  3. Bunch the meat together into a flower shape.
  4. Pinch the meat together holding it in place.
  5. Drizzle a small amount of pesto over the top.
  6. Garnish with an olive.
