Couscous Salad with Pumpkin Seeds and Walnuts

This is a great summer salad, quick to prepare and is super delicious. I love to serve this salad if we’re doing a barbecue as I find it’s a great accompaniment with meat. You can easily add different veg to it if you want. There really are not rules when it comes to salads in my onion!! I use homemade stock to cook the couscous so just be careful with seasoning if you are using bought stock as sometimes there is a lot of salt in them. If you are using bought stock I would skip the salt when you cook the couscous.

Ingredients
  • 300g couscous
  • 450ml veg or chicken stock (if you don't have either just use water and add some extra salt)
  • 1 tsp salt
  • 1 small cucumber, chopped
  • 1 small carrot, chopped
  • 2 spring onion, chopped
  • 50g walnuts, crushed
  • 40g pumpkin seeds
  • 3 tbsp cold pressed extra virgin olive oil
  • handful fresh chopped basil
  • handful fresh chopped flat leaf parsley
Instructions
  1. Place couscous in a large mixing bowl
  2. Bring veg or chicken to the boil in a saucepan
  3. Pour the stock over the couscous with salt and cover with a tight lid
  4. Leave to cook and then cool for about 20mins
  5. While the couscous is cooking chop all the vegetables into cube sized pieces
  6. When the couscous is cooked with the back of a fork fluff it up so it is not stuck together
  7. Add all the chopped vegetables, herbs and olive oil
  8. Mix well and serve.
