Mixed Bean Salad with Fresh Herbs

Ingredients
  • 720g dried beans or 3 x 240g tinned beans
  • 2 spring onions chopped
  • 2 celery sticks chopped
  • 30ml extra virgin olive oil
  • 1½ tsp sea salt
  • freshly grated black pepper
Instructions
  1. If you are using dried beans have a look at my legumes section to learn how to cook them perfectly.
  2. If you are using tinned or canned ones rinse them very well under cold water and place them in a bowel.
  3. Add the chopped spring onions and celery sticks.
  4. Drizzle the extra virgin olive oil over.
  5. Add sea salt and pepper.
  6. Mix well and serve
