Quinoa courgette and walnut salad


Here in Italy at the beginning of June you start to see lots of courgettes appearing on the market. This super healthy Quinoa courgette and walnut salad is a great recipe to make for the start of the season. I usually make a big portion of this salad as it keeps so well in the fridge, Courgettes are also very easy vegetable to grow as they don’t need much maintenance just a lot of water si if you have any space in the veg garden you should really give it a go. Serves: 4
  • 100g quinoa
  • 3ml extra virgin olive oil
  • ½ large onion finely chopped
  • 2 cloves garlic finely chopped
  • 3 courgettes chopped in small cubes
  • 3 springs of oregano
  • knob of butter
  • 50g crushed walnuts
  • 20g pumpkin seeds
  • juice of ½ lemon
  • handful chopped flat leaf parsley
  1. Rinse the quinoa with cold running water in a sieve.
  2. Place into a medium sized pot and cover with water.
  3. Bring to the boil.
  4. Reduce to a medium heat and cook for 15mins
  5. Once the quinoa is cooked pour it back into the sieve and drain the water.
  6. Cover and leave it in the sieve to cook.
  7. While the quinoa is cooking sweat the onions and garlic in olive oil in a large pot on a low heat for 5 mins.
  8. Add the chopped courgette, butter and orgeino and fry on a medium heat for 7mins.
  9. Once cooked transfer into a large bowel.
  10. Add the quinoa to the courgette mixture.
  11. Add walnuts, pumpkin seeds and lemon juice and parsley.
  12. Mix well
