Sautéed Mussels (Sauté di Cozze)

 

Walk into any good fish restaurant here in Italy and you’ll always find Sautéed Mussels (Sauté di Cozze) on the menu. This recipe is so simple to follow and is super quick to cook. The only down side to cooking any mussel dish is preparing the mussels. Depending on the type of mussels you buy, ‘farmed’ or ‘wild’, will depend on the preparation time. Mussels are a great inexpensive addition to to many dishes and I always find a big wow factor from my dinner guests, if I serve a big bowl of Sautéed Mussels for a starter.

Ingredients
  • 3kg mussels
  • 2tbsp extra virgin olive oil
  • 3 cloves garlic
  • ½ fresh chilli or 1tsp homemade chilli oil
  • 2 large ripe tomatoes
  • 150ml dry white wine
  • 2tbs extra virgin olive oil
  • handful chopped flat leaf parsley
Instructions
  1. Wash and scrub the mussels well and set aside.
  2. Sweat the garlic and chilli or chilli oil on a low heat in a wide frying pan for 5min.
  3. Add the tomatoes and white wine and cook for 2min on a high heat.
  4. Add the mussels and cover with a lid.
  5. After 3mins lift the lid and mix well.
  6. Put the lid back on and cook for a further ¾mins.
  7. You will know the mussels are done as the shells will have all opened.
  8. Remove the mussels with a slotted spoon.
  9. Put the pan back on the heat and cook them for a few mins to reduce the juice.
  10. Pour the juice over the mussels.
  11. Serve with a wedge of lemon and a slice of crusty bread.
